I sapori unici ed i piaceri del buon vivere
The 2020 growing season began with dry conditions in winter and spring accompanied by higher-than-average temperatures. Bud break, flowering, vine growth and development occurred right on schedule. June through mid-August brought sunny, dry weather but temperatures were relatively cool. A summer storm at the end of August alleviated vine stress of the late ripening varieties, such as Grechetto and Procanico, caused by drought conditions and allowed them to achieve optimal ripening while preserving freshness and aromas.
Grapes harvested to produce Santa Cristina Bianco were fermented separately based on the ripeness of each individual grape variety. The grapes were destemmed and gently pressed. The must was chilled to a controlled temperature of 10 °C (50 °F) to favor a natural settling of the impurities. The wine was then transferred into stainless steel tanks where alcoholic fermentation occurred at a temperature that did not exceed 17 °C (63 °F). The wine was kept at a constant temperature of 10 °C (50 °F) up until bottling which began in January 2021.
