Toscana – IGT Rosato (Typical Geographical Indication)
The 2019 growing season started out with dry weather during the first half of spring while the second half brought cooler temperatures and rain showers. These climatic conditions slowed down the vines’ vegetative cycle causing a delay in bloom by about 2 weeks compared to seasonal averages. Summer weather was hot with well-distributed rainfall throughout the season. At harvest time, the grapes had an excellent balance between acidity and sugar concentration levels as well as remarkable aromatic qualities due to optimal temperature fluctuations between day and night registered during the final weeks of ripening. Harvesting of Sangiovese, Cabernet and Syrah began at the end of August and was completed mid-September in order to fully preserve the fruit’s freshness and aromatic characteristics unique to rosé wines.
Harvested grapes were brought to the cellar, destemmed, crushed and gently pressed. The must was chilled to a temperature of 10 °C (50 °F) to favor natural settling of the impurities. Alcoholic fermentation took place at a controlled temperature that did not exceed 15 °C (59 °F). The wine was aged in temperature controlled stainless steel tanks at 10 °C (50 °F) to preserve aromatic components up until bottling.
