SPAGHETTI CARRETTIERA

This classic and extremely delectable pasta dish is a traditional preparation originating in eastern Sicily. It is a staple recipe that would be found in any true Italian household’s cookbook.

Simplicity at its finest, Spaghetti Carrettiera is a quick dish that can be easily made using just a few basic ingredients that are most likely in your kitchen. Although quick and easy to prepare, it never runs short of making one’s mouth water when paired and served with a fine glass of Santa Cristina Casasole Orvieto Classico to complement.

The spaghetti is served al dente, mixed with a divine tomato sauce. Chili pepper, combined with fresh garlic, adds a perfectly unique flare to this spectacular pasta dish. Parsley and pecorino cheese are added to top off the finished masterpiece.

Decked out in this lavish red sauce and presented on a lovely colorful platter, Spaghetti Carrettiera will surely please guests at any holiday gatherings that are planned this season.

Ingrediants

Ingredients

— 2 cloves of minced garlic

— 2 chili peppers

— 3 spoons of olive oil

— Aged Pecorino cheese

— 500g of canned tomatoes

— 2 spoons of minced parsley

— 350g of spaghetti

Instructions

  1. Golden garlic and chili in olive oil. Add tomato sauce and let reduce by half.
  2. Boil spaghetti in salted water and add to sauce when al dente. Cook until pasta is ready and add parsley and pecorino off the flame.
