- Cut chicken breast into 1/2 inch cubes. Line an oven pan with parchment paper and add chicken, olive oil, salt and pepper.
- Heat oven to 180°C and cook chicken for about 10 minutes (or until cooked completely through).
- Let chicken cool. In a bowl add cubed cucumbers, yogurt, mint, chicken and salt and pepper to taste.
