CHICKEN CACCIATORE

Ingrediants

Ingredients

— 1 medium size chicken

— 2 cups of tomato sauce

— 1/2 cup dry red wine

— 1 big sliced red onion

— 2 crushed cloves of garlic

— 1 tbsp fennel seeds

— 1/2 cup black olives

— 4 tbsp extra virgin olive oil

— Freshly ground black pepper

— Salt to taste

Instructions

  1. Wash and clean the chicken and cut it up in little pieces. Heat the oil in a sauce-pan, add the chicken and brown it.
  2. Remove from the pan, add the onion and gently cook for 5 minutes then add the garlic without the inner part and the fennel seeds.
  3. Put the chicken back in the pan, sprinkle in the wine and let the alcohol evaporate. Add the tomato sauce, salt and pepper. Cook, covered, on low heat for about 20 minutes, then add the olives. Cook for a further 10 minutes. Serve immediately.
